Kuku also spelled as Kookoo is an egg based Iranian dish. It is frequently a vegetarian dish, made with whipped eggs which then are folded in with various ingredients. It is similar to the Italian dish frittata or an open-faced omelette.

Ingredients
2 small potatoes
4 medium carrots
1 egg
Salt, black pepper powder and turmeric for seasoning
Oil for frying
Directions
Cook potatoes and carrots a half hour. Then mash them finely to get a smooth and consistent mixture. Put in a mixing bowl and break the egg and season to taste with salt, black pepper and turmeric. Knead the ingredients well. After that place the mixture inside the fridge so they get a more consolidated form. After a half hour , take it out. Heat oil in a frying pan and spread the mixture all around the dish. You can flatten the top with the back of your spoon. Fry Kuku on both sides. Once one side is done, turn it over carefully and keep frying with a lower heat. You can solely apply eggs whites to prevent the foam-like bubbles round the dish once frying. Transfer to a serving dish and garnish the way you like. Serve with bread. Bon Appetit!
